Farmer’s Bacon, Egg n’ Cheese Casserole

  • 8 eggs, whisked
  • 6 slices of cooked, crumbled thick-cut bacon
  • 3/4 cup shredded cheddar cheese
  • 2 red bell peppers diced
  • 1 large onion, diced
  • 2 cups fresh baby spinach
  • ½ cup Farmers Pantry Original Cornbread Crisps, crushed
  1. Preheat oven to 350 degrees
  2. Sauté the pepper and onion in oil or cooking spray until soft and onion is translucent
  3. In a bowl, whisk together the eggs and bacon
  4. Fold in cooked peppers, onion, spinach, and cheese
  5. Pour the mixture into a lightly greased pie dish
  6. Top the casserole with crumbled Farmer’s Pantry Cornbread Crisps
  7. Bake for 20 minutes, then loosely cover with foil and continue to bake for another 5-8 minutes
